Paleo Sausage Breakfast Cups

Hi, can we talk about breakfast for a second?

I love it, absolutely love it. I’m also a creature of habit, so I can very easily slip into the pattern of eating the same thing over and over again. In attempts to mix things up, I have decided it’s time to branch out from my typical protein pancakes or paleo porridge and try something a little savory.

I was wandering through Whole Foods this week and saw some turkey breakfast sausage. I’ve never cooked sausage myself (I know, I know) so I tried to give it a shot.

I initially planned on just putting it in an omelet but I wanted to get a tad more creative that that.

Creative, not complex.

No need to stress out over breakfast at 6:30 in the morning.

So that’s why I love this recipe. It’s simply delicious, and easy to whip up in a JIFFY.

Paleo Sausage Breakfast Cups

Ingredients
10 eggs
1 pound pork sausage or turkey sausage
salt & pepper to taste

Directions
Preheat oven to 350 degrees.

Grease a muffin tin with coconut oil or nonstick spray. Divide the sausage into 10 of the muffin cups, molding the sausage to fit the muffin cups. Crack one egg in each of the sausage covered muffin tins. If some of the egg spills out, that’s okay, just press the sausage down more so that there is more room for egg.

After filling up around 10 muffin cups, place the pan in the oven for 35 minutes.

Take out when done, season it up and enjoy!

You could also scramble the eggs first with whatever veggies you have in the fridge and then disperse them on the sausage and proceed to cook the cups as directed.

I ate 2 for breakfast, plus a large apple. I probably can eat more than that but it was a perfect portion for me.

It’s the little things in life, ya know? I haven’t had these two flavors together in so long that even something as simple as breakfast sausage with an egg is a sensory overload for me. And when I say overload, I mean a magnificent, delicious, tasty, overload.

I’ve been branching out lately and eating things I love but refused my body for so long. One of those things is sausage, and sometimes yolks. I love yolks, but I’m probably a little to rigid on when I allow myself to eat more than one.

But you know what, I’m making baby steps in my mindset in regards to nutrition.

One yolk at a time.

But hey, did you take note of the fact that this recipe only has two ingredients?

So you can’t tell me that cooking “healthier” meals is difficult, expensive and/or too time consuming. Cause I’m pretty sure this tasty treat is inexpensive (for making 10 cups, uhh yeah), easy to make and absolutely delicious.
